Ingredients Ingredients for a scrambled egg: 1 cup ricotta cheese (you can use any kind of cheese you like) 1 cup white wine vinegar 1 egg yolks (about 5 to 6) 1 teaspoon lemon juice 1 tablespoon lemon zest 2 tablespoons milk 2 tablespoons extra virgin olive oil 1/2 teaspoon salt and pepper 1 egg white (about 1.5 to 2 tablespoons) 1 egg, beaten 2 cups shredded parmesan cheese, chopped (about 6 to 8 ounces) 1 tablespoon fresh rosemary, chopped 1/4 cup grated Parmesan cheese Directions To make scrambled eggs: Preheat the oven to 400 degrees Fahrenheit.
Heat a large frying pan over medium heat and add the ricotta.
Saute the ricottas until they soften and begin to crackle, about 5 minutes.
Add the vinegar and lemon juice and whisk until the vinegar is reduced to 2% or less.
Add half of the egg yolt and the lemon zests and whisk the yolts until they form a soft yolk.
Add a bit of milk and mix until it forms a soft paste.
Remove from heat and stir in the Parmesan.
Pour the ricocheted egg mixture into the prepared pan.
Bake for about 10 minutes, until the yolk is golden brown.
Remove and cool completely.
